Seitan Scramble

1 bell pepper, chopped1/2 onion, slicedhandful white mushrooms, quarteredhandful carrots, shredded1 - 4 ounce package seitan, diced1 tablespoon soy saucefreshly ground black pepper, to tasteany other spices you wish to add2 to 3 tablespoons olive oil
1) Have all your ingredients ready to go.
2) Heat 2 tablespoons olive oil in a fry pan. Add diced seitan, soy sauce, pepper, and spices. Cook for about 5 minutes, or until seitan starts to brown. Add sliced onions and cook for 3 minutes. Add chopped bell pepper and shredded carrots and cook 2 minutes. Add quartered mushrooms and cook 2 minutes.
Good served with breakfast potatoes and ketchup Smiley
