Amish Friendship Bread/Tropical

1 C Amish Bread Starter1/3C canola oil1/3C unsweetened applesauce1 C milk3/4 C egg substitute or 3 eggs1 tsp vanilla1 C allpurpose flour1 C whole wheat pastry flour1/2 C sugar1/2 C splenda1 1/4 tsp baking powder1 tsp cinnamon1/2 tsp baking soda1 small box Jello sugar free fat free vanilla instant pudding1/2 tsp salt100 grams dried apricots cut into small pieces1/2 C dried cranberries6 Tbsps unsweetened coconut1 small can crushed pineapple, drained and wrung as dry as possible
Soak apricots and cranberries in hot water for about 15 to 20 minutes; drain well. Set aside with the drained pineapple.
Mix all wet ingredients in a large bowl. Mix all dry ingredients in another bowl. Add the dry ingredients into the wet ingredients and mix well. Add the fruit and coconut and mix throughly. Pour into loaf pans that have been sprayed with nonstick cooking spray.
