Black beans and quinoa

Ingredients
1/2 cup chopped onion1 tbsp olive oil1 cup quinoa2 cans tomatoes1 can corn1 can black beans
Directions
Thoroughly rinse quinoa to remove the bitter tasting residue on the seeds.
Drain tomatoes, reserving liquid.
Heat oil in a large pot and add chopped onions. You can also add any herbs and spices you may want. I use thyme and chile peppers. Cook the onions until translucent.
Measure 2 cups of the tomato liquid and add to the cooking onions. Add the rinsed quinoa, bring to a boil, reduce heat, cover and simmer for about 10-12 minues.
Add the drained beans and corn and mix thoroughly. This is good hot or cold.
