Bean Pie

Ingredients
Filling1 3/4 C cooked pinto beans, drained3 large eggs1 1/4 C Sucralose/Splenda 4 Tbsp melted margarine1/2 tsp vanilla extract1 tsp ground cinnamon1 tsp ground nutmeg1/4 tsp ground allspice1 tsp baking powder1/3 C fat free vanilla yogurtGraham Cracker Crust4 Tbsp melted margarine8 low fat honey graham crackers (16 squares)
Directions

Preheat oven to 350 degrees.
Mix melted margarine and graham crackers in a bowl.
Move mixture to a 9" pie pan and press firmly into sides and bottom of pan.
Bake for 8 minutes.

In mixing bowl with electric hand-held mixer, beat the drained beans until smooth.

Beat in eggs, sucralose, margarine, vanilla, cinnamon, nutmeg and allspice.

In a separate bowl, combine baking powder and yogurt. Add to bean mixture.

Beat mixture well to blend; pour into the cooled pie shell.

Bake the pie in preheated 350° oven for 50 minutes, or until set. Let pie cool before serving.
