Fiona's Tomato Sauce- All Fresh Veggies

Ingredients
2 tbsp Olive Oil1/4 of large onion, chopped (1 small onion would work)1 clove of garlic4 Tomatoes, skinned and chopped1/4 cup pureed tomatoes1 Small Red Bell Pepper (or to taste)2 Carrots, chopped1/2 cup vegetable stock (not calculated in)Sprinkle of crushed red pepper, to tasteBasil or other seasonings to taste
Directions
Place oil, onion and garlic in large frying pan and sautee.
Add in all other ingredients except carrots and cook until desired thickness.
About 5 minuted before finished, add in carrots to cook until they are softened but not too soft.

Add to a baked potato, pasta or whatever else you want to try it with!
