Sexy Summer Red Quinoa Salad

Ingredients
Salad:1 cup Red Organic Quinoa (rinsed well!)1/2 Red Onion - chopped2 whole Tomatoes chopped1 Cucumber-peeled and chopped1/2 cup fresh Basil-choppedDressing:4 Garlic Cloves-crushed1/4 teaspoons Lemon Juice3 tablespoons Balsamic Vinegar1/2 teaspoon Crushed Red Pepper (or pepper of your choice)1/2 teaspoon Sea Salt1 teaspoon Dijon Mustard1/4 cup Extra Virgin Olive Oil

Directions:
1) Bring 2 cups of water to a boil, add Quinoa, cover and simmer over low heat for around 15 minutes or until water is fully absorbed. Set Quinoa aside and let it cool completely.

2) Quickly whisk together all of the dressing ingredients except the extra virgin olive oil. Once combined, slowly whisk in the olive oil, a little at a time to allow oil and vinegar to mix properly.

3) Toss all salad ingredients with dressing.
(Refrigerate overnight to allow the flavors to blend perfectly. This salad is even better the day after!)
