coconut flour cake

Ingredients
8 ounces Coconut flour0.7 ounce splenda6 eggs (4 yolks discarded).1 tsp. Vanilla essence 1 tsp baking powder (optional)one Lemon or Lime2 ounces Margarine melted with 2 ounces low fat spread cheese.
Directions
Mix the flour, splenda, eggs, vanilla essence and baking powder together, add the grated zest of a lemon or lime and all it's juice. Melt the margarine with the cheese and add. If the mixture needs more moisture add a little milk.

bake in a pound loaf tin (I line with silicoln paper to avoid extra fat!

Bake in oven medium heat (uk 180). us 350 for 50 minutes check at 40 minutes.

Serving calculation is for 12 pieces, but you can cut it smaller or larger!
