Ingredients
Jalepeno Pepper- 1 pepperGarlic, 1 clove Canned Chipotle Chilis in Adobo Sauce (1 can), 1TbsCanned Tomatoes, 1 can Pepper, black, 1 tsp PAM - Olive Oil Cooking Spray (0.4 sec spray)365 Omega-3 Large Brown Egg, 4 eggsCilantro, raw, 1 tbsp - choppedCorn Tortillas, 4 tortilla, medium (approx 6" dia) Salt, 1 dash Cumin and Corriander seeds powder, 1 tbsp Sour cream - 2 Tbs
Directions
Saute' jalepeno and garlic in pam with corriander and cumin. Add tomatoes and 1 tbs chopped chipotle chilies in adobo. Cook for several minutes to reduce sauce slightly. Add salt and pepper to taste. Gently crack 4 eggs and poach until set. Serve with tortillas and dollop with sour cream.
