Authentic Guacamole

Ingredients
3 Ripe Avocados1 Italian (Roma) tomato, diced3 Tbs. chopped white onion1 Serrano Pepper, seeds and membrane removed1 oz Caciquie Queso Fresco, crumbledJuice of about 1/4 of a lime1 1/2 tsp. kosher salt
Directions
Mash avocado with a fork, adding one of the whole seeds to keep guacamole from browning. Add onion, serrano, tomato, queso fresco, salt and lime juice. Stir until mixed. Best if you let ingredients marry for at least 10 minutes, but can be served immediately. *Note--if you like a smoother guacamole, you may put avocadoes (without seeds) in a blender or food processor with a tablespoon or two of water and puree until smooth*
