Holly's Frittata

Ingredients
2 medium slices bacon1/2 cup chopped onion1/2 cup chopped bell pepper1 cup chopped zucchini1 cup egg beaters2 eggs1/2 cup shredded cheddar cheese
Directions
Cook bacon, drain and crumble. Add chopped vegetables to skillet and cook until tender. Then added crumbled bacon. Add eggs and egg beaters which have been whipped together. Salt and pepper as desired. Cook as you would an open omelet. When it has cooked about half way through put it in the oven under the broiler. After the eggs have cooked all the way through top them with the cheese and stick them back under the broiler until the cheese melts. This makes a wonderful very filling breakfast with a slice of toast. Serves 2
