Manhattan Clam Chowder

Ingredients
2 6 1/2 oz. minced clams1 c. chopped clelery1/3 c. chopped onion1/4 c. chopped carrot1 8 oz. bottle clam juice2 c. cubed potato1 t. dried thyme1/8 t. black pepper1 14 1/2 oz. can diced tomatoes, undrained2 slices turkey bacon, cooked & crumbled
Directions
Saute celery, onion & carrot in small amount of water until tender. Stir in juice from canned clams, adding enough water to make 1 1/2 c. juice. Add bottle of clam juice. Sir in potatoes, thyme, cayenne pepper, and black pepper. Bring to a boil, then simmer covered for 10 minutes. Stir in undrained tomatoes, clams and turkey bacon. Return to boiling, reduce heat. Cook for 1 - 2 minutes more or until heated through. Makes 3 2-cup servings.
