Cauliflower Fritters, Indian style

1 head of Cauliflowe1 cup Chickpea/Garbanzo bean Flour1 tsp salrtdash of pepper, to taste1 tsp dry thyme2 tsp ground cumin1 tsp ground coriander seedsCayenne pepper, to taste2 egg whites6 TBSP Safflower Oil
1. Break up cauliflower into bite size pieces
2. Mix batter from chickpea flour and all spices, add enough water to make it a smooth batter of medium thickness (about a cup)
3. Beat egg whites to soft peaks and blend into batter
4. Heat oil in small batches, as needed, on medium heat
5. Dip cauliflower and fry on all sides for 5-8 minutes, until golden reddish
6. Place on paper towel and eat immediately.
Only make as much as you will eat, then make more as needed, fresh, They are just much better hot than cold.
I'd love any suggestions for how to make these baked - maybe put some of the oil right into the batter?
