Grits & Potato Breakfast

Ingredients
1.5 cups uncooked grits1 tsp salt7 egg whites2 whole eggs2 small red potatoes, baked2 TBS light butter
Directions
Cook grits as directed. Meanwhile, microwave bake two small red potatoes. When grits are done, add eggs and egg whites. Continue to cook over low heat for 5-7 minutes. Chop potatoes and add to mixture. Makes 6 one cup servings.
