ROMANO CRUSTED CHICKEN BREASTS

2- 6 ounce skinless chicken breasts, rinsed and dried1 cups saltine cracker crumbs, about one packet ground in food processor2/3 cups grated imported Romano cheese or shredded Parmesan1 clove garlic, mincedFlour1 large egg whiteSea SaltLemon wedges
Add cracker crumbs to a large bowl. Add the minced garlic and knead it into the cracker crumbs. Add cheese and mix.
Put flour in a smaller bowl. Beat the egg white in a separate bowl. Place the bowls next to each other in this order: flour, eggs, then the crumbs.
Season the breasts with salt. Dust the breasts in the flour, then the eggs; cover the breasts with the crumb mixture. You make them ahead of time and place them in the refrigerator.
Preheat oven to 400 degrees F. Spray an ovenproof dish with cooking oil. Arrange the breaded chicken breast and bake for 20 minutes or until juices run clear.
