SWEET AND SAUCY BAKED CHICKEN

Ingredients
2 lbs. boneless, skinless chicken breasts or thighs (I use tenderloins)1/3 cup apricot jam or apple butter 1/3 cup Dijon mustard 1/3 cup pure maple syrup or honey 1/4 cup chicken broth1 tsp. dried tarragon 1 tsp. paprika
Directions
Preheat the oven to 350 degrees. Cut each chicken breast in half crosswise (the short way) to make them each 2 pieces. Put the chicken in the bottom of a baking dish large enough to hold them in a single layer. In a measuring cup or bowl, mix together the jam or apple butter, mustard, maple syrup or honey, wine and tarragon. Pour the mixture evenly over the chicken, and flip the chicken a couple of times to coat it. Sprinkle the paprika over the chicken pieces.

Bake the chicken for 30 minutes until it is cooked through. (Meanwhile, prepare the asparagus and couscous). Serve it immediately, refrigerate it for up to 2 days, or freeze it for up to 3 months

    I liked it very much. I suppose that the wine mentioned in the directions, was extra to the chicken broth in the list of ingredients. I used little of the broth and more of the wine. I marinated it for a few hours and then cooked it on the stove. I don't use the oven very much. - 4/5/13
