Spicy Omelet

Ingredients
1/2 small onion, sliced thin1 jalapeno, seeded and sliced thinfew sprigs of cilantro, roughly choppedchili pepper salt2 eggs
Directions
Put sliced onion, jalapeno, and cilantro in a small bowl. Sprinkle with salt and chili pepper. Add two beaten eggs and combine with veggies.

Pour the mixture into a hot frying pan, sprayed with Pam. Cook for a few minutes, then flip. Cook until done.

Serve, folded in a semi circle, between two pieces of rye toast. Mmmm. Comfort food.
