Colorful Chicken Stir-Fry

Ingredients
1 Tbsp soy sauce1 Tbsp water3/4 tsp corn starch1 tsp minced garlic1 1/2 tsp dark toasted sesame oil1 Tbsp finely minced fresh ginger root1/2 pound chicken breast cut into thin, bite-sized pieces3/4 tsp canola oil1/2 cup snow pea pods1/2 cup yellow bell pepper1/2 cup red bell pepper1/2 can (4 oz) sliced water chestnuts, drained
Directions
In a small bowl, combine soy sauce, water, garlic and cornstarch.

In large non-stick pan, heat sesame oil over medium-hiih heat. Add chicken and ginger. Stir-fry until chicken is cooked through and lightly browned, about 3 minutes.

Transfer chicken to bowl. Set aside. Add canola oil to skill and stir-fry water chestnuts, pea pods and peppers are crisp-tender, about 3 minutes.

Return chicken to pan and stir-fry for 30 seconds. Add soy sauce mixture and stir-fry an additional 30 seconds.

Makes 2 servings.
