Chocolate Chip Pumpkin Muffins

1 15oz can pure pumpkin1 cup Splenda1/2 cup eighth continent light soymilk1/3 cup unsweetened applesauce1 cup egg substitute1 tsp vanilla extract2 1/2 cups flour2 tsp baking powder1 tsp baking soda1 tsp cinnamon1/2 tsp salt1/4 tsp nutmeg1/2 cup Nestle mini chocolate chips
Beat together the splenda, milk, applesauce, egg substitute, and vanilla
Combine the flour, baking powder, baking soda, cinnamon, salt, and nutmeg and add to first mixture
Add the pumpkin and chocolate chips
Spray muffin tins and fill 2/3 the way full
Bake at 400 degree oven for 12-15 minutes
Makes 24 muffins for 75 calories, or 18 for 100 each
Substituting chocolate chips for raisins or something can lower the calorie content! Using raisins cuts 10 cals for the 18 muffins
