Vegetable Barley Soup

Ingredients
3 carrots, chopped3 celery stalks, chopped1 onion, diced2 cloves garlic, finely chopped or pressed4 T Chicken soup base (like chicken bullion)4 T bacon bits8 C Water14 oz can Stewed Tomatoes1/4 C Catsup4 oz tiny Spinach pasta shells1/2 C Pearled Barley, uncooked3 T Balsamic Vinegar
Directions
Sautee the chopped vegetables and garlic in a few teaspoons of water until tender.

Add the bacon and soup base and stir.
Add 8 cups water, stewed tomatoes, and catsup.
Bring to boil. Add pearl barley.

Cook, uncovered 40 minutes, stirring occasionally.
Add uncooked pasta. Cook, uncovered, stirring occasionally, for an additional 20 minutes.

Just before serving, stir in the balsamic vinegar.

Make 8 generous servings.
