Orange Ruffy in Garlic Orange Sauce

1 Orange Ruffy Fillet (you can substitute Talapia or Cod)1/2 cup Onion1 Clove Garlic1 OrangeSalt & Pepper1/4 tsp Cayenne Pepper
Saute onion and garlic in pan remove from heat. Zest one orange and set aside. Place half of the garlic and onion mixture into a blender and add half of the orange peeled, blend until even consistency. Place first half of onion and garlic mixture back into pan and cook fish on top of mixture. Salt & Pepper the fish and add the orange zest ...be careful not to put to much zest on is very powerful taste...Once fish is cooked place on plate and add sauce. Great served on top of fresh arugula salad.
