Kale Soup

Ingredients
1 quart chicken broth (4 cups)1 bunch kale (stems removed, chopped) (about 4 cups)2 carrots (diced)1 onion (chopped)2 large potatoes, (diced)5 cloves of garlic crushed1 can diced tomatoes (low sodium)1 can garbanzo beans (or other white bean, rinsed)1 tsp italian seasoning2 TBL olive oilWater as needed.
Directions
Cook onions in olive oil until translucent. Mix in italian seasoning and garlic and stir for 30 seconds. Add in chicken broth. Add in carrots, potatoes, kale. Add water, if needed. Bring to boil. Cook until potatoes are tender. Add in tomatoes and canned beans and warm through.

    I love this soup! This is my first experience with kale. Yummy. The only thing I changed was the broth. I didn't have chicken so I used vegetable. Thanks for sharing. - 3/27/10
