Chocolate Mousse

Ingredients

2 cups (or 2 6 oz. packages) semi-sweet chocolate chips2 egg whites1 tsp. vanilla extract2 cups heavy whipping cream
Melt chocolate chips in mircrowave or in a double burner. Let chocolate cool until lukewarm but still liqued.
While chocolate is cooling, beat eggwhites on high speed with electric mixer until soft peaks form.
In separate bowl, beat whipping cream with vanilla until soft peaks form.
Gently fold egg whites and whipped cream together. Now fold in chocolate until mixed thoroughly.
Spoon into individual serving bowls and chill 2 hours before serving.
Serve as 8 half cup servings.
