Bettsi's Blackberry Pie

Ingredients
4 cups fresh blackberries1/3 cup whole wheat flour1/3 cup sugar1/2 tsp. ground cinnamonCrust:2 cups whole wheat flour1 tsp. salt2/3 cup shortening4-5 T. ice cold water
Directions
Rinse berries thoroughly. Gently fold in sugar, flour and cinnamon. Set aside.

Mix flour and salt. Cut in shortening until entire mixture resembles pea-size crumbs. Add cold water, a tablespoon at a time, until dough holds together. Divide into two lumps. Roll out each lump into a 12" circle. Place one inside your pie tin. Fill with berries. Place second circle of crust on top. Cut vent holes, crimp edges.

Bake in 425° oven for 35 to 45 minutes. After first 15 minutes, cover edges of pie with foil to prevent over browning. Let cool for one hour. Makes 8 delicious, mouth watering slices.

    4 cups of berries wasn't nearly enough to fill my pie plate. I doubled the amount of berries and used Splenda to replace the sugar. We liked the whole wheat crust! - 4/17/08
