Amy's Spicy Tuna Roll

Ingredients
1.5 oz raw yellowfin tuna, chopped into rough 1/4" squares6 g (1/2 Tbs) mayo 2 g (1/2 tsp) wasabi paste3 g (1 Tbs) tempura crumbles* 1 sheet nori90 grams (scant 1 c.) prepared sushi rice3 thin cucumber strips, deseeded* The true calories in the tempura crumbles is difficult to estimate; I assumed the entire weight was fat and substituted an equal weight of oil in the calorie estimator.
Directions
In a small bowl, mix chopped tuna, mayo, wasabi paste, and tempura crumbles (deep-fry small amounts of tempura batter until golden, drain well, and store in air-tight container for sushi). Set aside.

Lay sheet of nori on sushi mat (google for sushi making techniques, it's easy!). With damp hands, press the rice onto the nori in a very thin/single grain layer, leaving the top 3/4" inch of nori bare.

On the bottom half of the rice-covered nori, lay the cucumber strips out in a thin strip. Cover with tuna mixture to form an even 1" band. Roll tightly.

Cut with sharp wet knife into 8 equal pieces and serve with soy sauce.
