Bison Meatballs in Tomato Onion Sauce

Ingredients
Ground Bison Meat, 1 lb Garlic, 2 cloves choppedPepper, black, 1/4 tsp Parsley, dried, 1 tbsp Tomato Sauce, 2 - 8oz cans*Lipton Onion Mushroom Soup & Dip Mix (Dry Mix), 1 packageWild Blend Brown Rice- - 1 C dry, cooked according to package directionsOptional: use 1/2 tsp. garlic salt instead of fresh garlic but it will raise sodium count (soup mix has enough!).
Directions
Cook wild rice according to package directions.

In a deep saucepan, mix 1 1/2 Cans of tomato sauce with 1 1/4 C. water and 1 package dry onion soup mix. Bring to a boil; simmer for 10 minutes.

Meanwhile, add remaining 1/2 Can tomato sauce with the ground bison, garlic, pepper, and parsley. Mix well and shape into 16 meatballs. Gently place into hot sauce mixture and simmer gently for another 30 minutes, stirring occasionally.

Serve meatballs and sauce over rice.
1serving = 4 meatballs + sauce over 1/2 C. cooked rice.

    Good! I made it in the crock pot and it worked great. I will definitely make it again - but next time I will be sure to use no-salt added tomato sauce - it was just a touch salty for my taste. - 1/25/11
