Ground Chicken Lettuce Cups with Peanut sauce

Ingredients
Ingredients:20 ounces Organic Valley Ground Chicken1 small diced Carrot1/2 diced Celery rib1/2 Red Bell Pepper, diced1/2 cup diced Red Onion1/2 cup Mung Beans, lightly chopped1 clove minced Garlic1 tsp fresh grated Ginger Root1 clemintine orange, chopped1 tbsp low sodium Soy sauce1/2 tsp Sesame Oil2 tbsp rice wine vinegar hot sauce to taste**sauce ingredients**1/4 cup smuckers natural chunky peanut butter3 tbsp low sodium Soy sauce1 crushed Garlic clove3 to 4 tbsp water 1 packet SteviaDried Red Pepper Flakes to taste1 head of leaf Romaine, Bib or Iceberg Lettuce
Directions
In a medium pan cook ground chicken. Add vegetables, garlic & ginger root, saute for 1 minute. Add soy sauce, sesame oil, rice wine vinegar, clemintine and hot sauce. Cooking & stirring 10 more minutes.

Combine sauce ingredients in a glass dish, microwave for 1 minute, stir and microwave 1 more minute adding water if necessary.

To serve fill lettuce leafs with meat mixture, drizzle with sauce.
