Fresh Corn Salad

Ingredients
3 medium sized ears of fresh corn, husked1 chopped jalepeno pepper 1 Cup Cherry Tomatoes halfed or quartered1/4 Cup chopped white onion1 tbsp honey1 tbsp white vinegar2 tbsp fresh chopped cilantro
Directions
Cut fresh corn off of the cob, chop jalepeno pepper, onion and combine.
In a seperate bowl, combine vinegar, honey and cilantro. Pour over corn mixture and refridgerate.

I find the longer you let this set, the better it tastes--and as a bonus, you don't loose any of the nutrients of the corn by boiling them away.
