Chicken Caccitori

Ingredients
6 chicken thighs (or whatever chicken parts you wish to use)1 medium onion, chopped1 cup celery, chopped 1 cup red pepper, chopped 4 cloves garlic, minced (or to taste)2 large cans diced tomatoes1 can mushrooms (or 2 cups fresh)2 cups chicken stock (broth)1/2 tsp dried thyme1/2 tsp dried basil1/4 tsp dried oregano 2 bay leavessalt and pepper to taste.
Directions
Salt and pepper the chicken. In a very large pot over med-high heat brown the chicken in the olive oil. Remove chicken from the pot and add the onions, celery, red pepper and garlic. Saute until onions are just starting to brown. Add back in the chicken and everything else, stir and heat till sauce is simmering. Lower heat and simmer slowly uncovered until sauce is reduced by 1/3 to 1/2 and thickened. This takes 4-6 hours. Serve over pasta with a sprinkle of good Parmesan cheese and a nice side salad for a complete meal.
