joni's italian style vegy cassarole

1 medium zucchini2 cups chopped califlower1/2 green bell pepper diced2 cups chopped broccoli1 can mushrooms (4 oz)1 can tomato sauce (8 oz) 1 can italian style diced tomatoes (14.5 oz)1 tbs sugar2 oz each chedder cheese, mozzaralla cheese and pepper jack cheese2 tbs minced garlic1/2 cup cottage cheese2 tbs parmesan cheese grated
pre-heat oven at 350*
mix tomatoes, tomato sauce, garlic, sugar and italian seasoning in small bowl and set aside.
in a 9x9 cassarole dish (spray with non stick cooking spray) layer zuchinni, 1/2 of the califlower, broccoli, mushrooms, bell pepper and onions. spread pepper jack cheese on top. add half of the sauce on top.
then spread cottage cheese on top.
then spread remainder of veys, mozzeralla cheese and sauce
sprincle parmmesan cheese on top.
cover and cook for 45 min.
remove lid, spread chedder cheese on top, place back in oven and cook for another 15 min or untill cheese is lightly brown and melted well.
makes 6 serving (aprx 1.5 cup cooked)
