Lentil Salad

Ingredients
1 lb dried lentils, pick over & rinsed5 cups of water (add spices/herbs especially hot pepper and garlic)2 hard boiled eggs, chopped1/2 cup onion, chopped1/2 cup light Italian dressing Cheese, shredded (skim mozzarella)
Directions
Cook the lentils in a medium pot with a lid in water and seasonings, for 15 - 20 minutes until the lentils are tender, stir occasionally to make sure that they don't scorch. Drain if needed and toss warm lentils with dressing in a bowl with a lid. Stir in eggs & vegetables; mix well. Refrigerate.

Note: Any raw vegetables that you like cucumber, tomatoes, bell pepper. Be aware that some vegetables will make the salad "soupy" so you may want to add them right before you serve the salad.

Makes about 5 (1cup) servings

Add 1/8 cup shredded cheese to a serving if desired.
