Black Bean and Sweet Potato Chili

2 T olive oil1 medium red onion, chopped4 cloves garlic, minced1 t salt2 cups cubed sweet potato1 28 oz. can diced tomatoes4 15 oz. cans black beans1 jalepeno pepper, seeded and diced1 T cumin1 T chili powder1 t unsweetened cocoa powder2 limes, 1 cut into wedges and juice and zest of another1 C chopped cilantro (optional)
Makes 11 1-cup servings
Warm the oil in large pan over medium heat and add onion, garlic and salt. Saute 5 min. Add sweet potato, lime zest and juice and cook for 12 more min. Add the remaining ingredients except lime wedges and bring to a boil. Cover and simmer for 20 minutes. Serve with cornbread or over brown rice. Top with lime wedges and cilantro, if desired.
