Mary's Healthy Tuna Salad

Ingredients
3 sun-dried tomatos1 can tuna in water, drained1 celery stalk, chopped1/4 sweet onion, chopped1 carrot, shredded1/3 cup fennel, chopped3 tablespoons fresh dill, chopped1 1/2 tablespoons chopped fresh parsley1 tablespoon fresh lemon juice3 dashes tobasco1/2 teaspoon black pepper1 1/2 tablespoons light mayonnaise1 1/2 tablespoons low fat plain yoghurt1 1/2 tablespoons dijon mustard1 dash salt
Directions
Reconstitute the sun-dried tomatoes for 3 minutes in 1 cup hot water, Dry on paper towels and chop. Combine the tomatoes with the next 10 ingredients (through pepper) in a medium bowl.

Combine the mayonnaise, yoghurt and dijon mustard in a small bowl and pour over the tuna mixture; stir. Add salt to taste.

Serve the tuna in pita, on bread or over mixed greens.
