Chicken Quiche w/o crust

1 sm. onion1 med-large red pepper1 c. chopped cooked chicken3 T. Kirkland Bacon crumbles1 c. fat free Cheddar Cheese6 large eggs3/4 c. fat free milk1/4 c. olive oil mayo1 tsp. spicy brown mustard1 tsp. mccormick seasoningseveral grinds of the pepper mill1 tbls Extra Virgin Olive Oil
Saute Peppers and Onions in Olive Oil with Mccormick seasoning until tender, adding Bacon Bits halfway through. In separate bowl, mix eggs, mayo, mustard, pepper and milk with electric mixer until mixed. Add Chicken, Cheese and Pepper/Onion mixture and Stir with spatula. Pour into buttered square casserole dish and bake 45-55 min. at 375 degrees or until knife inserted in the center comes out clean. makes 9 servings.
