Dardanelles Falafal

2 cans garbanzo beans, drained1 small onion, chopped3 celery ribs, chopped½ loose C. Washed parsley, chopped¼ C extra virgin olive oil3 eggs1 tsp salt1 tsp paprika½ tsp cayenne pepper½ tsp black pepper4 tbl lemon juice1 C. Bread crumbs½ to 1 C flour1 Tbl. Crushed garlicOil for fryingYogurt sauce
makes 32 1.5 inch patties
Place the garbanzo beans in a food processor and whiz until they lose shape.
Add the onion and celery; continue to process until all of the vegetables are in very small pieces
Add the parsley, oil, eggs, spices, and the lemon juice.
Mix until a paste forms; tighten up the paste with bread crumbs and flour.
Add the garlic, and adjust consistency with more lemon juice, if needed. The paste should hold togethor when formed into patties, but they shouldnt be dry.
Fry patties in hot oil until golden brown. Serve warm or cold with yogurt sauce.
Note-When I made it I found through trial and error that the food processor was not happy when I did garbanzo beans then added onion and celery(it wouldnt chop the new stuff) so in my second batch I switched the order and chopped the onion and celery, then added garbanzo beans and it worked much much better. And really the smaller the pieces, the better and as always dont skimp on the spices!!
