Beef and Mushroom Penne Pasta Bake

1 lb. ground beef8 oz. whole button mushrooms, roughly chopped1 c. chopped onion3 c. whole wheat penne pasta, cooked2 c. low-fat basic pasta sauce1 15 oz. can Italian-stewed tomatoes2 c. part-skim finely shredded mozzarella cheeseSeasoning: fennel seeds, crushed oregano, salt (optional), freshly ground black pepper
Brown the beef and onion, seasoning with fennel seeds, oregano and salt and pepper to taste. Drain. Add chopped mushrooms and cook until mushrooms are done.
Meanwhile, cook pasta al dente according to package's instructions.
Combine beef/mushroom mixture with pasta sauce and stewed tomatoes, then add cooked pasta. Add shredded cheese and mix well.
Pour into a 9 x 13" pan sprayed with cooking spray.
Bake at 350 for 30 minutes.
Optional: top with grated Parmesan cheese.
