Quick and Easy Marinara Sauce

Ingredients
2 tbs olive oil1 cup finely diced onion1 cup finely diced bell pepper1 cup finely diced celery5 garlic cloves, minced2 small cans tomato paste1 small can tomato sauce3 (28-ounce) can crushed or diced tomatoes, including liquid3 tablespoons Italian SeasoningSalt to taste (I used 1/4 tsp for nutritional info)Black Pepper to taste
Directions
Saute Onions, Celery and Bell Peppers in Olive oil until clear. Add Garlic and stir in for about a minute until it releases aroma. Add all of the tomato products and stir until smooth. Add Salt, Pepper and Italian seasoning and blend. Cook for about 15 minutes to desired thickness. If it thickens too much add a little water to smooth out.

Makes approximately 8 3/4-cup servings.

Serve with Pasta of choice and Garlic bread.

    This is a great tasting recipe. I pureed 1 can of rinsed chickpeas and added. This made the sauce thicker and "meatier" - 4/10/10
