Southwest omelette

Ingredients
*Eggs Made Simple Egg Substitute, 1 cupButter, salted, 1 tbspGreen Peppers (bell peppers), 0.5 cup, choppedPeppers, sweet, red, raw, sliced, .5 cup*Old el Paso Refried Beans - Fat Free, 0.5 cupCheddar Cheese, .33 cup, shredded Avocados, California (Haas), 1 fruit without skin and seedsRed Ripe Tomatoes, .66 medium whole (2-3/5" dia)Lime Juice, .5 lime yields*Cumin seed, 2 tbspPepper, black, 1 tbsp Salt, 1 tbsp Pepper, red or cayenne, 1 tbsp
Directions
chop bell peppers and sautee in 1/2 tbsp butter.
While these cook, mash avocado, add juice of half a lime, diced tomato, salt, pepper, red pepper & cumin.
In large skillet, melt remaining butter and add eggs.
Once the eggs are set, add cheese, cooked peppers and refried beans.
Fold eggs and flip.
Remove from pan, top with guacamole.
Makes 4 servings.
