1/4 cup tequila1-1/2 Tablespoons canola oil2 Tablespoons fresh lime juice1 clove garlic, minced1-1/2 tsp each: dried oregano, ground cumin1 tsp each: onion salt, seasoned salt1/2 tsp each: chili powder, paprika, crushed red pepper flakes, fresh ground black pepper1 lb chicken breasts, skinless boneless (or flank steak), sliced thinly (1/2 inch)1/2 cup fresh cilantro leaves1/2 cup red onion, sliced into thin wedges1/2 cup each green, yellow and red bell pepper1-1/2 Tablespoons canola oil8 (8") low carb tortillas, warmedsalsa, optionalfat free sour cream, optional
Prep time is actually 20 minutes, then 3 hours marinating in refrigerator.
Combine marinade (tequila through ground black pepper) in large plastic bag or "marinating container" (mine is Tupperware). Mix with chicken, cilantro, onion, bell peppers. Marinate several hours.
In a 10" skillet (cast iron preferred), heat oil and cook fajitas meat mixture in batches, stirring and mixing quickly until meat is done, 4-5 minutes. To serve, spoon some meat mixture into tortilla, add salsa and sour cream if desired.
