Coffee Crockpot Roast Beef

2 Tbsp olive oil4 lb. beef roast1 cup brewed coffee1 cup beef broth1 medium onion, sliced or quartered2 cloves garlic, minced
Directions:
1. Sear beef in skillet in small amount of olive oil.
2. Put beef in crockpot.
3. Add coffee, broth, onions and garlic to skillet where beef was seared. Warm to loosen any drippings. Pour over roast.
4. Cook slowly 6-8 hours.
5. May add cornstarch to thicken gravy.
6. Serve with potatoes or over rice.
Makes approx. 8 - 1 cup servings.

I made this and my husband and I liked it. I couldn't get the gravy to thicken in the crockpot. I should have put it in a pan and done it that way. It was very good. We had roast beef, mashed potatoes with this gravy, cinnamon applesauce, broccoli with cheese sauce and tossed salad. Yummy! - 8/18/11
