Thai Cucumber Salad

Ingredients
2 cucumbers sliced thinCelery, raw, 3 cup, diced Fresh handpeeled Shrimp, cooked, 300 grams *Peppers, hot chili, red, fresh, 2 pepperLime Juice, 1 lime yieldsOlive Oil, 1 tbsp *Fish Sauce, 1 tbsp Ginger Root, 2 tsp Garlic, 1 clove
Directions
Slice the cucumbers thinly and put in large bowl. Slice the celery thinly and add to cucumbers. Wash the whole hand peeled shrimp quickly under water and add to the cucumber and celery mixture.

Put the rest of the ingredients in a blender and blend until there are no large chunks left and all ingredients are blended well. Put the dressing on the cucumber mixture and mix well. Chill for 10 minutes or a few hours. The longer the salad sits before serving the more the flavours will mix.
