Squash Browns (Hash Brown Alternatives)

Ingredients
2 Cups (Grated) Butternut Squash1 Large Egg3/4 cup of Italian Bread Crumbs (or Panko)3 Tbsp EVOO for fryingSalt and Pepper to your tasteOptional - Cayenne pepper for a kick
Directions
Grate your butternut squash
Squeeze out the excess water.
Beat your egg and add to the squash. Mix.
Add Salt and Pepper and your Cayenne pepper, if desired.
Heat your EVOO in a pan.
Take little scoops of the mixture and add to the pan. Flatten them out and cook. Brown on both sides. The mixture does not come out and crisp as a regular hash brown. A good 4 minutes on each side should give it a nice browning
Serve warm.
