Fluffy Oven Eggs and Bacon

Ingredients
Bacon, 6 medium slices, cooked (raw product Onions, raw, .5 cup, chopped (remove)*Kroger Value Baking Mix, .5 cup (remove)Egg, fresh, 3 large (remove)Milk, nonfat, 1.25 cup (remove)*2% Sharp Cheddar Shredded Cheese (Kroger), 1 cup
Directions
preheat oven to 375. Spray a 1 1/2 quart casserole dish with Pam. Sprinkle crumbled cooked bacon and sauted onion in bottom of casserole. In a bowl, beat eggs, baking mix, milk and pepper until smooth with electric mixer. Pour over bacon. Sprinkle with cheese. Bake uncovered about 35 minutes - until knife comes out clean.
