WIC Cookbook Vegetarian Black Bean Tacos

Ingredients
1 16-oz can black beans, drained and rinsed (or 2 cups cooked black beans)1 8-oz can corn, drained and rinsed1 4-oz can diced green chilies, drained1/2 onion1 tomato, chopped2 Tb cilantro, chopped2 Tb lime juice1 ts salt1/2 ts pepper1/2 head lettuce, shredded1/2 head red cabbage, shredded12 corn tortillas
Directions
In a medium bow, mix together beans, corn, chilies, onions, tomatoes, cilantro, lime juice, salt and pepper. Fill tortillas with bean mixture and top with lettuce and shredded cabbage.

Serving size is 2 tacos.
