Curry Apple and Celery Root Salad

Ingredients
1 large celery root2 medium granny smith apples4 tsp curry powder1/2 cup currants1/2 cup mayonnaise2 tablespoons lemon juice2 tablespoons water
Directions
Blend together mayonnaise, curry powder, water and lemon juice. Reserve. In food processor shred celery root and apple. Mix with mayonnaise and add currants. Can be refrigerated for upto two days.
