Lasagna the Trader Joe's Way

Ingredients
12 pieces lasagna noodles1 16 oz jar pasta sauce of choice (cal is for marinara)1 package frozen spinach (do not defrost)16 oz ricotta cheese1/2 container of pesto sauce (refrig in the deli section is best)8 oz shredded mozzarella1 package sliced mushrooms
Directions
Preheat oven to 375. Mix ricotta, pesto and frozen spinach in a bowl. Put a spoonful of sauce on the bottom of the pan 9x13" pan. Place 6 pieces of lasagna in the pan on top of the sauce. Layer another spoonful of sauce, 1/3 ricotta mixture, mushrooms and mozzarella. Repeat 2 more times. The last layer should be the mozzarella. Put foil over the pan and bake for 45-60 minutes (until bubbly around edges). Remove foil and bake an additional 5 min.

You can split this recipe in two and use two square pans. It freezes nicely and is great to have on hand.
