1 prepared bag of chicken flavored rice (like rice-a-roni) NO BUTTER1 15oz can of black beans, drained1 can Chicken Breast, drainedShredded Mozarella CheeseLight Sour CreamSalsaTortilla ChipsHot Sauce
Prepare rice as directed but do NOT add butter. When rice is tender but juices still remain, add black beans (drained). Allow to simmer for a few minutes, then add chicken breast chunks (drained). Simmer on LOW until mixture is hot. Serve in a bowl or on a plate with cheese sprinkled on top. If desired, crumble tortilla chips on top with salsa, sour cream and hot sauce.
Makes about 4, 1 cup servings of the rice mixture.
