Grain and Nut Whole Wheat Pancakes

Ingredients
1.5 cups old fashioned oatmeal1.5 cups whole wheat flour2 tsp baking soda1 tsp baking powder.5 tsp salt1 cup non fat, plain greek yogurt1.5 cups lite vanilla soy milk1 individual cup no sugar added applesauce.33 cup egg substitute.33 cup splenda1 oz. chopped walnuts2 tbs ground flaxseed1tbs pumpkin pie spice
Directions
grind oats in food processor or blender until fine. Mix dry ingredients together.
Mix wet ingredients by hand or with electric mixer until smooth
Mix wet ingredients into dry ingredients with just a few strokes...do not over mix. stir in nuts.
Heat non stick skillet to med-high and spray with non stick cooking spray.
Ladle batter by 1/3 cup fulls into pan, cook 2-4 minutes per side until brown.
Makes approximately 5 servings - 4 pancakes each.
