1 Eggplant1 cup Pasta SauceOlive Oil Spray2 Tblsp Bread Crumbs with Itialian Seasoning2 Tblsp Flax Seed1 Tblsp Parmesian CheesePreheat oven to 350 degrees. Spray casserole dish with olive oil spray or olive oil spritzer. Cut eggplant into 8 slices and arrange in casserole. Dish out 1/2 of the tomato sauce by the spoonful onto the eggplant peices. Spread the sauce and sprinkle with a mixture of breadcrumbs, flaxseed and parmesian cheese. Place in preheated oven and heat for 20 minutes. Remove from oven, flip the eggplants and spoon the remaining tomato sauce over the eggplant. Return to oven for 20 Minutes or until eggplant reaches desired tenderness. Makes 8 servings.
