Kerri's Potato Soup

Ingredients
8 cups peeled and diced potatoes3 fresh garlic cloves, minced12 cups water4-6 chicken bouillon cubes1/2 fat free half and half1/4 tsp cayenne pepper1/2 Tbsp butter2 tsp saltBlack pepper to tasteFat-free Shredded Cheddar, if desired
Directions
In the bottom of a large pot, brown garlic in butter over low heat. Add potatoes, water and salt. Cook on med-high until water is boiling and heat until potatoes are done (fork pierces easily through potato cubes, ~25 minutes). Add black pepper, cayenne, and bouillon cubes. Mash a few of the potatoes in the pot to release some starch and allow the soup to thicken a little. Taste for seasoning. Add half-and-half. Stir. Allow to warm bit. After dishing up, I'll add a small sprinkling of fat-free cheddar (not included in the calorie count).
