Carrot-Raisin Muffins

Ingredients
1-3/4 C enriched bran flakes1/2 C whole wheat flour3/4 C all-purpose flour1/2 C sugar1-1/4 t baking soda2 egg whites3/4 C sour milk, made with nonfat milk3 T applesauce, unsweetened1/2 C raisins3/4 C grated carrots
Directions
Mix first 5 ingredients in a bowl and set aside. Beat egg whites, sour milk, and applesauce. Make well in dry ingredients, add liquid ingredients and mix until moistened. Fold in raisins and carrots. Fill 12 muffin cups 3/4 full and bake at 400 degress for 20 minutes. Cool for 5 minutes before removing from pan.

    If you up the applesauce a bit, you shouldn't need the sugar. I've tried that with oatmeal-walnut muffins and it works great. - 3/18/08

    I love this recipe. It's so healthy but I made this with 1/4 cup brown sugar instead of 1/2 cup white sugar & 2 pkts. Splenda plus some all-spice to kick up the flavor - 3/16/08
